Here's an idea:
When you wake up on the weekend and have a lazy morning to spend at home, make one of these bad boys.
Breakfast pizza. I know, sounds weird. Then again, so does drenching pasty frozen waffles in a cup of Mrs. ButterWorth's (and don't even get me started on some Norwegian breakfast favorites...)
But if you think about it, it includes everything one loves about weekend breakfasts; bacon, eggs, and carbs. Ideally, you'll use a homemade crust (preferably thin, Italian style), I've used this recipe literally about 100 times and if you make a double recipe when you have pizza for dinner on a Friday night, then you can bake off the last two crusts without any toppings and pop them into the fridge or freezer to use for your weekend breakfast! It works well to incorporate some barley or finely ground whole-wheat flour into the recipe from time to time, as well.

Here's what you need:
1 8"-10" pizza crust (thin crust, preferablly homemade, *see not above)
Pizza sauce (homemade, or your favorite store-bought. I love Mutti) You'll need about 6 - 8 oz.
1 ball fresh mozzarella
1 small handful of a sharp cheese (we used cheddar, but Gruyere or Parmesan would be good too)
Couple slices of bacon- something good, preferably smokey and thick cut (or go with ham, Prosciutto, salami, or even some roasted vegetables, if that's all you have in your fridge)
1 egg
Salt and pepper
+ other toppings that work well: some fresh basil, a little caramelized onion, a snippet of chives, a few tomato slices, drizzle of olive oil.
1. Preheat your oven to 475F/250C. Pop in a baking stone, if you have one. Chop your bacon into large pieces, fry it until cooked (but not extra crispy- it's going into the oven soon). Soak up some of the grease before placing on pizza.
2. Take you pizza crust and place it on either a pizza peel or a piece of baking/parchment paper. Slop on your pizza sauce, then scatter your fresh mozzarella and second cheese. Top with the bacon, then take your egg and crack it in the center of your pizza (it will become sunny side up in the oven). Sprinkle with salt and pepper, and any other toppings of your choosing.
3. Once preheated, quickly slide the pizza into your oven. Keeping a close eye on it, bake for about 5 - 8 minutes, until the cheese is sufficiently melted and the egg is set. Serve immediately with orange juice and coffee, and eat in all of its runny, messy glory.
